Normally, I don't write about food; we eat very simply here. However, last night, on a whim, we tried this recipe from Cook's Country (the "down home cooking" version of Cook's Illustrated) for something called "Cheesy Toasted Ravioli with Pesto". Without question I can tell you that its one of the best meals ever prepared in our kitchen, and one of the most delightful things I've eaten anywhere. Also, easy to make with little fuss (not always the case with CI and CC 30-minute meals).
I'm sorry about the photo of the card vs the photo of the actual meal, but we ate it all before I realized I would want to spread the word. (Please pardon the little bit of my hair that shows up in the photo of the recipe card.)
What was funny (and sort of a sign of things to come) is that we got that exact pan for Christmas and ended up using it to cook the dish, without realizing it.
